Healthy Bean Salad

Healthy Bean Salad

This is a simple, quick and really healthy salad, that accompanies grilled fish or lamb kebabs or koftas really well.

INGREDIENTS

A quarter of a packet of mixed salad leaves or baby spinach leaves.
2 Large Celery Sticks, sliced
Half a Cucumber, sliced into strips
100g Fresh Parsley, chopped
100g Fresh Mint, finely chopped
1 Red onion, sliced and finely chopped
1 Can Red Kidney Beans

Dressing:
1 Tbs Good Quality Cold Pressed Extra Virgin Olive Oil
1 Tbs Red Wine Vinegar
Juice from Half a Lemon
Pinch of salt
Ground Black Pepper

METHOD

  1. Place the chopped onion in a small bowl and cover with the dressing. Allow it to sit for 5- 10 minutes.
  2. Arrange the salad leaves on a large plate or in a salad bowl, then add your cucumber and celery.
  3. Add the chopped herbs.
  4. Drain the kidney beans and add them to the plate.
  5. Now add the red onion and all the dressing and mix through.

Serve as a side dish or as a light lunch for 4 people, alongside fresh bread.
