Healthy Bean Salad

This is a simple, quick and really healthy salad, that accompanies grilled fish or lamb kebabs or koftas really well.
INGREDIENTS
A quarter of a packet of mixed salad leaves or baby spinach leaves.
2 Large Celery Sticks, sliced
Half a Cucumber, sliced into strips
100g Fresh Parsley, chopped
100g Fresh Mint, finely chopped
1 Red onion, sliced and finely chopped
1 Can Red Kidney Beans
Dressing:
1 Tbs Good Quality Cold Pressed Extra Virgin Olive Oil
1 Tbs Red Wine Vinegar
Juice from Half a Lemon
Pinch of salt
Ground Black Pepper
METHOD
- Place the chopped onion in a small bowl and cover with the dressing. Allow it to sit for 5- 10 minutes.
- Arrange the salad leaves on a large plate or in a salad bowl, then add your cucumber and celery.
- Add the chopped herbs.
- Drain the kidney beans and add them to the plate.
- Now add the red onion and all the dressing and mix through.
Serve as a side dish or as a light lunch for 4 people, alongside fresh bread.
